Indian food is an easy go-to. They've been working out how to make plants taste good for thousands of years. Vegetables, chickpeas, lentils, coconut milk, tomato, lots of spices and garlic, tastes good.

I'm pretty new to it but these are the ingredients I found most helpful (that as an omnivore I didn't know about)

nutritional yeast aka nooch - cheesy unami flavour that goes with everything, and contains several B vitamins that you don't really get from plants, not to mention it's almost entirely protein. I mix it into most things I cook, especially things like rice, sauces, guacamole.

textured vegetable protein - basically defatted soy, but I don't buy the phytoestrogen thing anymore anyway. It's pretty flavorless on its own, but it's great for replacing meat in things like chili (or even snacking on it plain >in dry form).

I COULD give you a special vegan recipe I have, OR I could walk away and save the rest of my night from arguing this convince you being vegan isn't worth it.
The main reasons people start being vegan, besides virtue signalling for hipster girls, are: health, environmentalism, and ethics. I will now debunk all of these.
First of all, health. Unless you have some sort of disease or defect that makes eating meat painful, there is no benefit. Meat has fat and proteins you won't get outside of importing dozens of plants that all pale in comparison to meat.
Animals are raised on land that would not support all the wasteful farming habits your lettuce takes. All the cows in the world do not make the gases even one factory makes. Animals also facilitate turning the inedible parts of plants into fertilizer for more plants or directly into more food as meat.
Finally, ethics. There is no ethical consumption under capitalism, every leaf of lettuce you eat is grown on the back of what amounts to slave labor, if the treatment of humans you don't know means nothing to you then why should animals you've never met mean anything. Maybe focus less on cows and more on the chinese poaching and eating pangolins, tigers and elephants into extinction.

Except that isn't the case. There's about a million survey studies that aren't really scientific because asking people about their diet and health without confirming anything doesn't prove a damn thing. The only experimental tests have shown that there is no significant health difference in terms of cardiovascular indicators, weight gain, cancer risk, etc. between all diets in the world, with the singular exception of the mediterranean diet which is experimentally proven to be the best for cardiovascular health. It also features animal products.
The consistent data from experimental, actual science shows that the principal benefit of being vegan is that vegans are generally health conscious to begin with, so they exercise more, eat less, drink less alcohol, smoke fewer cigarettes, and generally have healthier life-styles than other non-health conscious people.

I personally can't stand most vegans trying to guilt trip others into being vegan. I know what animals go through is tough but I didn't convert to being vegan because someone guilt tripped me into being one. I did it out of health reasons. The compassion for animals came much later. Either way, if someone chooses to eat meat, they should be able to make that choice.

I truly believe there are greater corruptions on this earth that need to be brought to light, and this animal suffering, while bad, is nowhere compared to the state our society is currently being guided by extremely evil and powerful people, who see human beings no different than a slaughterhouse sees a cow.
