In no way is foie bad in most facilities. Their anatomy is different from ours. They have no gag reflex, and in the wild will gorge themselves if they have food available to the point where they would wreck their liver and never migrate.

What if I slice a piece off I plan to cook and use kitchen tweezers to pull the veins out of the cross section? Would this be a better way to preserve the shape of the lobe?

People have this idea that gavage is horrifying because it would be highly unpleasant for humans. But ducks/geese are not humans, and have a very different physiology- namely, one that is capable of swallowing whole fish. They have no gag reflex and their throats are quite different, structurally, from ours, so the feeding tube doesn't hurt them at all. Hell I've been to a farm that raised ducks for foie, they lined up for it. Having a liver that fatty is for sure not healthy for them but guess what, they're going to get killed anyway, so that doesn't matter either.

Absolutely get some and try it by the way, it's great. Have a piece seared on top of a steak or, if you have the time and patience, make a torchon.
