Lard is pretty based. My mom thought lars was like the devil, she had a bit in our fridge that she would vehemently refuse to use because lard is "so unhealthy!!!". Yeah, like butter or olive oil are a lot better, still fat.
I started using it pretty recently (6 months ago). I use it as a basis oil for pork dishes, and it instantly makes any pork dish a bit better. While cooled lard has a very strong and delicious taste, cold lard is extremely soft and delicate. I dream of making some single layer pastry with it instead of butter, to use to make pork dumplings. I will probably try that out eventually.
In summary, while lard is not very versatile, it is an amazing ingredient if you know how to use it.
