I used to hate beef stew when my parents made it
Made my own for the first time the other day and it was bretty gud, if not a bit basic
Need some good tips to crank that shit up. I was short on time so I skipped browning the meat first, definitely doing that next time

Put beef, carrots, peas, celery, barley, onions, potatoes, and mushrooms, (any other shit you want) into a crock pot, add beef broth, packet of brown gravy mix, salt, pepper, garlic, cumin, thyme, any other spices you want, put it on low and in like 8-12 hours you got stew. Pretty hard to fuck up.

Stew is complete

>>11528538
Literally this.
Soup needs peers to lean on in order to pass as a full meal receiving constant affirmation that they aren't shit on their own
Stew is as fucking dense as a bullshit faggot fuck and knows what it is without interference. Get out of here bread you crusty fuck and your buttered tender inside cocksucker

The difference between Hot Liquid Broth Meals depends on a variance of Two Ratios.

A. Viscosity (Thickness) of Broth 0-10
B. Ratio of Broth to Ingredient. out of 100%

E.g.
Hot Broth/Stock Bowl:
This is just a bowl of hot broth, it has a thickness of zero and ratio of Broth 100% to Ingrediant 0%.

Clam Chowder:
Thickness of Broth: about a 6
Ratio of Broth to Ingrediant: 75-25.

Turkey Gumbo:
Has a thickness of about 6-7
B to I Ratio is 35-65.

So, what's the difference between a soup and a stew?

Low thickness across the board, and a varying B-I Ratio.

Soup: Higher Left than Right Ratio: e.g. 75-25
Stew: Higher Right than Left Ratio: e.g. 25-75

The same could be said of Chowder and Gumbo, which are higher thicknesses, however are noted by their B-I ratios.

Gravy, Jams, Jellies and Sauces fall under this category as well, because it follows the same viscosity and B-I ratios.

Let's say, Gravy; which has a thickness of about 9, and has a B-I ratio of 100-0. However, Hot Meal Pie Filling is similar, however has a B-I ratio of 30-70.

Jellies have a thickness of about 10, with a B-I of 100-0, Jams have the same thickness, however have a B-I of about 45-55. Perserves have a thickness of 10, however have a B-I of 25-85.

Ultimately, it's all good for the tums; but there are subtle differences.

Also:
Manhattan Clam Chowder, is actually a soup, rather than a chowder, like the name implies. This is because its tomato broth base is thin, and its B-I is 70-30.

Fuck me im hungry for some stew. Post those recipies anons!

>Season 1lbs of cubed stew meat with salt, pepper and cover in flour
>Heat up your stew pot on high and add olive oil
>Brown your meat in batches, about a 1:30 each batch and remove from pot
>Add butter to the pot and sear your veggies. Thick chopped potatoes, carrots, celery and mushrooms. Season with your choice of spices (I use a 21 seasoning blend) salt and pepper.
>Sear for 2-3 mins and remove from pot
>Add more butter, minced garlic to the pot, and chopped or sliced onions
>Cook onions till translucent
>Add flour to the onions ass well and cook out the flour
>Add about a cup or 2 of red wine
>Allow the alcohol to cook out
>Add the beef broth after about a few mins and about a tablespoon of tomato paste
>Add back the Beef and let simmer for 3 hours
>Taste the stew and add salt and pepper to your liking.
>If the stew is too thin or you want it thicker, whisk together melted butter and flour then add to stew.
>Add back in your roasted veggies for another 30 mins of simmering
Serve in a bowl with a side of bread and enjoy!

browning the meat for fond is key to good stew flavor, tomato paste and wine to build the base and braising in the oven are my recommendations. Also add some veggies that don't take as long to cook halfway through. Anchovy paste can also add extra ummami. Great way to use cheap cuts of meat.
