Much meatier and steak-like than chicken.

It's a little bit better and more savory, but you have to do it the right way or get it at a good place. I can imagine if it wasn't prepared in the right way it wouldn't be so good, but I've had it at good places.

duck is delicious

>> No.11518223

I have a muscovy hen. Her eggs are delicious. My tortoise's eggs are very good too. I don't plan on eating their meat, tho, they're my beloved pets.

I'm Brazilian. It would be illegal if you went to a forest and picked them up from the ground, but sice it's my pet, it's fine.

Lucky you. Have any pics of how you prepare your tortoise's eggs?

Sadly i don't have any pics. But you can prepare them like you would do with regular bird eggs, they difference is that the yolk texture is a bit "drier" (if that even makes sense) and the whites don't cook like bird whites and just stay jello-y, but other than that, you can do whatever you would do with a bird's egg.

With the way the Chinese cook everything well-done, their duck meat usually ends up rubbery and hard to chew.

Local Asian place that does an amazing sauce on their beautifully cooked duck.
I go back there specifically for that dish.

We get duck once or twice a month in the work canteen. Its an excellent meat.

IMO roast duck or roast goose is the superior bird for Christmas roasting, ahead of turkey.

Just curious, i didn't want the eggs to go to waste. Turtles don't even care about their own children, let alone unfertilized eggs, so whatever.

Yes, I prefer to break it up and just pan fry the breast, confit the legs, and deep fry the wings.

>> No.11519046

It's good, but meat quality varies. From really nice soft and tender to absolute tough, fibrous ones. Tastes really well with puree and mint sauce/black currant sauce.

I don't personally because if it's cooked right the meat isn't dry. Any sauce then just obscures the god-tier taste of duck.

Porcelin grease strainer and storage units are great for saving fat, especially bacon fat. They come complete with strainers that are easily cleaned. I'll cook up batches of bacon then save the bacon and dump the grease into the strainer then that goes into the refridgerator. Then the grease is easily used later.

Crispy skin and greasy brown flesh with gravy is the bees knees.
