They use scotch bonnets in a lot of their dishes which before the meme strains of death peppers was one of the hottest. They also use the "hot" spices like allspice, clove and cinnamon. My main fault with it is bad jamaican cooks often overdo the allspice and clove.

I think it's good. They do seafood. Lobster, rice and peas, cole slaw. Jerk chicken and curried goat are both standbys that most restaurants will carry. Idk how authentic the beef patties are, but I miss those too.

Here is my jerk spice recipe, it's one of few things I made where I was surprised it was that good. Really warm flavors from the spices while also having a lot of freshness from the wet ingredients.

Quantity for about 3 whole chickens.

>Dry spices
1 cinnamon stick
1 tablespoon coriander seeds
1 teaspoon cloves, whole
6 pimento seeds (allspice)
1 teaspoon black peppercorns

>Wet spices
1 bunch scallions, chopped
1 large onion, roughly chopped
2 to 3 Scotch Bonnet peppers
10 sprigs thyme, leaves picked
Juice of 2 limes
1/2 cup soy sauce

Puree wet ingredients in food processor. Toast dry spices until fragrant. Grind dry spices in spice/coffee grinder. Add to wet ingredients and continue to puree to mix evenly.
