for some breads yeah you really should let the dough sit for some time before baking it
one time in some hippie homeschool program we made this french bread thing with lemon zest and one batch I made right after making the dough, wasn't very flavorful. The other half I made after the dough was in the fridge over the weekend and it tasted amazing
