I have had jollibee both in the Visayas region and here in California and other than restaurant layout and how food is ordered there is a slight difference in how the two taste, but I don't think it's all that great to be honest. We do, just that Filipino fast food generally doesn't use more than tomatoes, onions, garlic, and the occasional bok choy because they want to cut down on ingredients and cooking. If you meant why a lot of Filipino food generally lacks veggies and herbs, that stems from the fact that as an island nation there weren't really that many kinds available and most food involved fish and or boiling.
