>peel and cube tates, boil long enough for them to soften
>strain and return to pot, add splash of olive oil and stir to coat cubes
>spread cubes on oiled cookie sheet, tinfoil for easy cleanup
>coat with seasoning salt, I like lawrys, pepper, bacon bits and shredded cheddar
>bake around 20 mins at 400F

Anyone try salt-baked potatoes? It's the bomb. You put some potatoes (I've done russet or fingerling) in a casserole dish and cover with salt and bake. When they're done you just break them free from the salt and serve. I save the salt to reuse next time.
It's the best way to bake a potato.

Pro tip: put your potatoes in cold salted water in the pan and then turn on the heat rather than throwing them in boiling water.

Salt and vinegar fingerling potatoes.
Slice fingerling potatoes in half, put in pot, fill pot with 50 percent water 50 percent vinegar, add like a cup of salt. Boil until soft. Try not to breath in steam. Roast in oven.
So good.
