Elk and moose are the best to eat overall but whitetail is good too, if you mean large game. For small game I'd say that snipe and woodcock are the ultimate for both the sharpshooter and the gourmand.

We have an introduced bison herd in the Yukon.
It was planted here during the time when Wood Bison were on the verge of extinction.
Originally it was assumed that the largest the herd could possibly get was around 400 individuals.
The herd is now at almost 1100 bison. As long as you have the ability to make a humane kill and carry out all the meat, head and hide, you can shoot any adult bison you want.
