The reason that this is the case is how our taste buds are wired to perceive certain aldehydes & other compounds which are responsible for the flavor of cilantro. Some of us perceive it as a pleasant fresh taste. Others perceive it as a soapy taste, a chemical taste, etc.

For a long part of Europes written history, Cilantro was regarded as a shitty, unwanted herb that you would never use in food. Over time the genes that control how we perceive it must have changed so that now most white folks can enjoy cilantro just like the Indians and whatnot.
