I’m not really a David Chang fan but look up how spiel about it, it’s pretty spot on. Short version is xenophobia made whitey scared of yellow man’s mystery spice, some absolutely terrible science, and middle aged housewives psyching themselves out to think it made them sick. Verdict has been in for a long time on this one, it’s conpletely safe. Literally safer than sugar and salt.
