Now here's where I like to experiment more
>Sauce: I'll usually put a little bit of hot sauce of one kind or another, not enough to overpower the cheese flavor. Sometimes I'll do extra shit though, like a shot of ranch, or taco sauce, jerk seasoning sauce, butter chicken sauce, alfredo sauce, etc.
>Herbs and spices. ALWAYS cracked black pepper. No salt, it's salty enough and I salt the water when I cook the noodles. Fresh minced garlic is glorious if I have any and I'm not lazy. Basil is usually great, oregano can be better depending on the other ingredients and sauces I plan on using. Montreal steak spice almost always works well, same with chili powder (especially when paired with garlic). If I'm going the "Indian" route, I might add a bit of cumin, curry powder, and cilantro.
>Whatever the fuck else: Crushed tortilla chips if I'm leaning toward "Mexican" flavours, parmesan cheese if I'm leaning toward "Italian". This shit writes itself.

I fucking love making my lazy man's "casserole" whenever I make mac and cheese. Best meal in a bowl. It's also a perfect base model for newly-learning, practicing, or curious chefs to experiment with different spices, seasonings, ingredients, and flavor combinations.

Browned hamburger crumbles w/ sauteed onion turns it into hamburger help kind of casserrole.
Crumble microwaved bacon on top as a garnish.

When I make my own mac n cheese from boxed pasta, not a mix, I always include 1/2 chopped onion. Barilla elbows are rigate and superior. Back of the box is a recipe for simmering the noodles in milk, and making one pot mac n cheese, so there's no reason to buy crappy store brand powdered or greasy mix mac n cheese. Use the real thing. The pasta is firmer and thicker, more structure and the sauce is better when it's milk, button, cheese you grate yourself.

If I make a baked mac n cheese casserole, I like to top it with fresh (coarse) breadcrumbs, butter, and a little bit of cheese. I like it golden crispy on top.
