I like about 1-2 tablespoons of honey mustard, some black olives, and sauteed onions in mine. You don't salt the pasta water as heavily and it's better if you use a sharp cheddar.

This is the worst mac and cheese recipe I've seen. The cheese is too strandy so once the dish gets cold it would be impossible to eat without a knife. Bacon sucks in mac and cheese as well.

I'm a mac and cheese purist. I don't like adding bacon or other shit other than cheese, noodles, and spices and what ever the sauce is made of.

I usually use a aged cheddar / gouda / creamcheese combo. But when I make the sauce I add in Parmesan.

Spices, I add tumeric, a good dose of black pepper (it's personal pref), nutmeg, and some sort of poultry seasoning or seasoning you'd add in a sea food boil, like old bay for example.

It's all in the seasoning to be honest.

I had a couple packs of fondue swiss I got on sale I needed to finish off and the thought occured, why not make it into mac and cheese? Cooked the macaroni in a pressure cooker with chicken broth, then when warm add the cheese and mix and season with garlic, pepper and paprika. It is even better as leftovers reheated in an oven to get a crispy outer crust.

Bacon is not good in everything. It has a tendency to overpower dishes that have a more nuanced flavor. Also it adds a lot of salt to a dish that is already salty from the cheeses.
