what are some can't-miss beers to try

All of them, most pubs only have 2-4 varieties from the same brewery on tap, so just give them all a crack. You will drink 10+ pints a day without noticing. Look more for good non-touristy pubs instead of particular beers.

Get yourself a booking (if necessary) for a Lokál and just eat and drink yourself fat.

Klášterní Pivovar has great choices, it you're here for beer, go there
I personally like Unětické 12°, but I don't think it's really worth to actively look for it all over Prague
