From what I gather, Vietnamese who fled during and after the war settled in certain cities. For example, I live in Syracuse, NY, a city of around 150k people, and we have a larger population of them. There's 5 Vietnamese restaurants, which is notable for such a small city. I'm sure most other small to medium sized cities don't have that many. The Vietnam War itself doesn't have much to do with it's popularity here though.

I dont think we have that trailblazer mentality like the chinese to venture into terra igconita. Vietnamese are also coastal people cause the country is basically a damn coastline, so for sure there are higher concentration up and down the two coasts compare to the middle part.

If I have to choose, it’s Japanese. I will add however that I’m bias bc I lived there close to a decade. The price and service along with the food was always top notch eating out there. No reused oil taken from the sewers like in China which is nice.
