Most of the fruitcake I've had - even some kinds I've heard people say would be good - have a taste that reminds me of toothpaste. That's not an exaggeration; my best description is that it kinda tastes toothpaste-y with this weird texture on the berries where some somehow seem too firm in comparison to the other berries.
I also don't think they're actually berries I'm not really sure what the fuck they are because like I said, it all just reminds me of toothpaste.

Fruit cakes that taste of toothpaste? wtf. Even the homemade ones will be bad unless you stick to some simple rules. The main problem is that many of them are baked at the wrong temperature. Stick to around 140 degrees c. Don't bake them at 180 like sponge cakes. If you do they'll dry out before the inside is cooked and end up like a brick. Number one complaint about these types of cakes is that they're dry. Bake it properly at low temp and it won't be dry.

With all that dried fruit a fruit cake won't be light like a sponge cake, but they shouldn't be close textured or stodgy like mashed potato. You should still be able to see the 'crumb' of the cake.

The next mistake people make is not to soak their dried fruit in brandy/cognac/whatever liquid for a few days beforehand. If you don't do this the dried fruit will suck up moisture after the cake is baked.

Next up is the mixed peal. There are a lot of bad suppliers of mixed peel. They don't prepare it in a way that removes the bitterness. Remember when you were told not to zest citrus too deeply otherwise you would get bitter pith? Well many suppliers won't cook this off because it takes many changes of water or whatever labour saving method they use nowadays.
