What do you do when you are at a steakhouse and order a steak and they give you something that looks raw and undercooked as hell like this?

This sort of shit made working the grill hell even if you temped every steak with a thermometer. Fucking customers don't even know what they're ordering. Got real tired of people ordering medium-rare when they wanted close to medium-well.
