Hey guys i've made a terrible mistake by agreeing to cook a meal for my "friends" and i don't want to puss out. So do you have any suggestions what i could cook. I also have only 2 hours preparation time.

make pasta
ingredients:
onion, celery, carrot, garlic
minced beef
passata
olive oil
basil
salt
caramelise a mirepoix and garlic
in a separate pan, brown some beef mince
combine the two and add enough passata to just cover the mixture.
let it simmer on a low heat for 30 minutes.
cook some pasta until al dente. any will do.
add some olive oil and fresh basil to the sauce, then the cooked pasta, and let the whole mixture cook gently for another 5 minutes
serve with shaved parmesan on top

I agree with pasta. A very simple one is chicken cacciatore.
>Brown salted skin on bone in thighs and/or legs. Remove.
>sautee onions, bell peppers and mushrooms until softened
>add garlic, tyme and rosemary for 1 minute.
>deglaze with wine
>add crushed canned san marzano tomatoes and chicken and simmer for 1 hour
>cook pasta 10 minutes before done
>Add pasta to chicken along with fresh basil and grated parmeggiano
Serve with a nice salad and garlic toast.

A big roast chicken, Mashed potatoes w/ gravy, Garlic bread, Spinach or salad. Simple easy and you can make it in a few hours
