Because I'm not a berber herdsman and I make more money pushing the plastic buttons on a square board that a wire comes out of, and talking into the harness tied to my face. I can buy a year's supply of saffron in a few hours' work, and I use saffron pretty generously. inb4 it's fake, no, stop with your projecting. Saffron has incredibly poor yield. We have quite a few saffron growers in my area, and it's simply not worth the labor, or the space. If you want to grow a small patch for yourself that's fine, but commercializing it for profit is next to impossible.

You're looking at several hundred square yards for ~$80 yields.

Because if you were going to plant anything, easy to maintain and high-yield produce like tomatoes and cucumbers is much more likely to save you money and taste better because it's fresh and not dried like saffron?

Just because it's the most expensive spice doesn't mean you should grow it. Grow something else you use a lot of and splurge on harder to grow herbs and spices.
