I had a buddy who went on an expedition to the near arctic for a month (in the summer). Eggs aren't practical since they're too bulky and too fragile and meat won't keep in the summer months so their main source of protein was bacon. Unfortunately their plane was delayed by 12 hours or so at departure so it all thawed and was slightly mouldy when they got there, they were mostly botanists so they just identified the mould and decided it was fine, after three weeks though, their bacon was growing the wrong kind of mould and they had to throw it out.

Basically, bacon is good outdoors food because it lasts for weeks even when shit goes wrong.
