So I made some fried rice and although it's good I feel like I'm missing some things. I wanted to add bean sprouts to it but there weren't any at Kroger so I'll have to find an Asian market to go to. I was also thinking green onions to get some color in there.
My biggest gripe with it though is that the fried rice I made just isn't a sweet dish, it's more on the salty side. Does anyone know of anything I could do to it to help fix that? (I saw online some people add sugar to theirs). I guess my other option would be to have it as part of a main dish that is sweeter so it is balanced out, and if that's the case I would need a good dish to go with it

I think peas and carrots add a lot of natural sweetness to fried rice. Even onions can be a little on the sweet side.

Sweetcorn is good for making it sweet without sugar; but I personally like to add a teaspoon of brown sugar

Definitely avoiding peas but yeah maybe I'll add some carrots to it, I did have onions but probably not enough if I'm not getting anything

so I looked this up and it just seems like fried rice with some fresh stuff on top. Maybe the big difference is that it uses sweet soy sauce?

Either way one of the pics got me to thinking about dicing up fresh some fresh tomato and mixing it in with a batch of fried rice, I don't know why but I feel like this would taste pretty good.

Dump shallots and garlic in mortar and mash until a paste(you can add lemongrass too), add sambal and dark soy sauce to the paste. Either toast or quickly fry some shrimp paste until fragrant, quickly fry paste from before until fragrant, add shrimp paste, then rice then whatever else you want.

sounds good, will definitely try it if I can find the stuff

>sweet soy sauce
Probably. The big thing that you probably know is that normal soy sauce is extremely salty. That's why your fried rice is salty to begin with.

Yeah I knew it wasn't going to be sweet or anything but this is my first time making it so once I finished I wanted some sweetness but that was the only thing I made

>> No.11398712

first of all, you get a little bit of sweetness from stir-frying certain vegetables under high heat so the outside slightly caramelizes (peas / carrots / onions)
Second of all, just put some sugar in there.
No, really, that's what legit asians actually do.
When you make a batch of fried rice next time, sprinkle a tablespoon of white sugar on top of the rice right before you start breaking it up and stirring it around.

You can also grow bean sprouts yourself

I 10/10 recommend growing bean sprouts yourself

>> No.11398734

i fry rice with carrot, peas, green onion tops, galangal, and some brown sugar dissolved into soy sauce. when the sauce boils up it will almost glaze the rice its great. if you want it super sweet add a touch of mae ploy sweet chili sauce

>> No.11398932

along with the other suggestions, make sure you always use a bit of fish sauce. it's really a gamechanger for fried rice

>although it's good I feel like I'm missing some things
>feel like
PROTIP ----> NEVER say 'feel' when you mean 'it is my opinion,' or 'I think,' or 'I believe.' It is weak and does not portray any sort of thought.
