My recipe is to get a whole pack of chicken wings, put them on a baking tray. Pour over a little sunflower oil, add salt, pepper, paprika, cayenne, worcester sauce, plenty of hot sauce, anything else (chilli powder, five spice or whatever). Bake for 45 minutes. Squeeze over fresh lemon and lime, eat with BBQ sauce and wash down with tropical juice. So goddamn good.

It would probably taste better to marinate it or something but I'm happy with what I got. Raw chicken doesn't last long after you release it from the packet either. Fuck KFC or fried chicken, the best is when you bake it properly, overcook it for extra crispiness.

I made a chef's salad recently, and the recipe was just like, "Yeah, add some meat or whatever", so given the lack of specificity, I decided to cook a chicken breast to add rather than just buy something pre-prepared.
Wasn't anything complicated, but its the first time I'd departed so far from the specific recipe instructions.

SUPER basic: Salt/pepper/thyme on the chicken.
Cast-iron skillet with oil. Did a little sear on each side.
Then took some leftover onion and garlic from a previous recipe, chopped and threw those in the pan just to sit there and sizzle and leak juices.
Stuck a thermometer in the chicken and threw the whole pan in the oven at 350.
Sliced into little medallions to serve with the salad.

I mean, I just did it like I would a steak, but every bite of chicken in that salad was fucking amazing, so that's become my favorite way to do chicken.
