Part of it is also that washing meat isn't actually that bad. It's pointless, but it's not going to kill you. And because of that it creates confusion. Why am I being told that a practice passed down through generations is now all of a sudden going to kill me? The nannying nature of the guidelines produces a rebellious response as well. It's more about these two things than whether their way is actually correct or not.

I think the issue is that people doing it aren't mindful of the water splashing off the meat, carrying bacteria with it. So you're potentially spraying salmonella water all around your sink area. There's no real reason to do it though, unless your meat was frozen then thawed and is covered in juices that leaked out during the thawing. It's not really making the meat cleaner which is what people who think you need to "wash" meat think it does.

You are being told that this practice passed down through generations is now all of a sudden going to kill you because enough evidence has been collected through studies that can link the spread of disease to cross contamination

The nannying nature of guidelines exists because people don't have the same level of knowledge as people who study these things constantly

It's not about what is correct, it's about what is safest. If you want to smoke cigarettes, fine, but we know that cigarettes harm you and it doesn't mean that because your whole family smokes and your grandpappy only developed emphysema at 82 that you aren't putting yourself in harm's way

Water without soap still removes bacteria. Not as much obviously, but cleaning something with water does remove bacteria. Don't think it really makes a difference with meat since it's going to be cooked anyway though.

I was agreeing that washing meat is pointless. But there's a difference between being pointless and something being a significant danger. Take China for example. There are 1+ billion people washing meat and they have been doing so for generations. That's a pretty huge sample size, a larger sample size than any scientific study could ever hope for. And the people continue to do it because it's not dangerous enough for them to even notice.

The experts say that the act of washing meat does not clean the meat and can cause cross contamination. I agree with that 100%. I was trying to understand why people react the way they do to this information. They don't like being told to do, especially when the dangers are not that great. That's all.

They're dangerous, but not as dangerous as people make out. Unless you're very young or very old, or frail or something like that, your body is able to deal with a lot of that stuff no problem. In developed countries there's a culture of litigation that leads to companies and governments being hyper-sensitive about any potential danger, no matter how small. I don't wash either. But if I were to wash I would do it this way: Boil 2 pots of water, one for washing, one for cooking. Dunk raw meat into wash pot, After meat has been sufficiently washed, place into the cooking pot. Empty wash pot into sink without worrying about splashing bacteria everywhere because they've all been boiled to death.
