I'd like to recommend an entry level hugel field blend or one of the cheaper PGs or gewurztraminers from schlumberger, here on the east cost you can pick those up for under $15 but it may cost a bit more out there

There are so many absolutely delicious wines that can be found for dirt cheap prices, but sometimes if you want something special you gotta shell out a little.

Don't know how this will go down on /ck/ but have you ever tried Eiswien? Fucking delicious.

I'm talking sweet Riesling that is what it is because the grapes are left on the vine until winter comes then the frozen grapes are harvested and immediatly pressed leaving behind almost all the water weight. The juice from these ice (eis) grapes is stupid sweet and acidic and done right (it doesn't get done wrong, way too expensive for a producer to not take care of this) yields the most delicious sweet white wine.

This process has to be hand done. In Sub zero temperatures. By expert farmers. Obviously the price is gonna be more than 10€.

Same goes for noble rot styles.

Wine is white and red and sparkling and sherry and port and orange and rose and, and, and.

Decent bottle of standard plonk, sure. You don't have to spend big to get value. But please drink some special ones sometimes. They're fucking delicious.

Uruguayan wines are great if you like high tannin and complexity. They're mostly Tannat and can be pretty hard to find.
Chilean Cabernet Sauvignon is decent, it's not a fruit bomb like most California cabs. Carmenere is a better Chilean grape for the price. Look for higher elevation vineyard sites, particularly for Cabernet. They also do good Rhone varietals on occasion.
Mass-market Argentine wines are overrated and usually over-fruity, except from certain regions (usually high-altitude as well). Uco Valley and Lujan de Coyo are great as long as you don't mind paying $30+ for a Malbec.

As far as one-dimensional can sauvs go.... From Northern CA I do find them to be _generally_ mediocre. BUT: find one from the Red Mountain area of WA and you'll be pleasantly surprised by red berries and sage brush with a mineralistic component rounding off the balanced tanins.

I was invited to a special tasting event hosted by moet and chandon a while back, and as a surprise they brought one of the vintners from Newton winery in Cali to speak. He had us try 3 single vineyard cabs from Napa; Spring Mountain, Yountville, and Mt Veeder. One was 100% cab, the others were 98-99%. And my God were they big wines. Tons of body, still quite young and deep deep ruby bordering purple and black. But the flavor was very developed, they were spectacular. I hear that a lot from people too, they probably got a bad headache from drinking too much Andre or J. Roget at a New Year's party one year. A well-made Champagne is unbelievable, my favorite big name non-vintage is Tattinger; their blend is more chard and less Pinot noir so it's a bit softer and more delicate. But it's aged in the bottle for longer than required so it has more bready biscuity autolysis flavors that just really rounds it all out.

In terms of savory, maybe go for a light, fruity red like a Gamay or new world Pinot Noir. In terms of whites, maybe something with some nice acidity, like Chenin Blanc or something a bit softer like Pinot Grigio.

In terms of sweet, maybe some traditional method sparkling wine like Cava, or some Moscato d'Asti. I'd avoid most sweet wines, people usually aren't that into them.

Keep in mind I don't know a lot about pairing, so if someone tells you otherwise, maybe I'm wrong.
