Nope its because people tend to eat moderate portions. You would be appalled if you came to the states and saw how much we eat and drink in one sitting. Ratio wise Italian cooking uses a fair amount of fat and salt in most of their dishes but they don't eat nearly as much as we do so it all balances out.
