Just tried to make homemade hashbrowns and it was a total disaster. As usual when I make something new, it burned on the outside and was raw on the inside somehow.
The oil I put in the pan just disappeared. The potatoes stuck to the pan and left this residue on the bottom.
Where did I go wrong?

The biggest missed steak is not drying the potatoes properly. They hold a lot of water, you need a ricer to squeeze moisture out or leave them out for an hour on paper towels while squeezing every 15 minutes
the liquid in it doesn't cook out quickly enough for the innards of the hashbrown to cook properly, so the outside gets burned while

Heat oil to medium high, put potatos in and press to 1/2" thick, reduce heat to low and cover. Cook @10 minutes. Gently lift one edge and if golden brown, add a little more oil and flip. Leave uncovered and cook another 10-15 minutes until golden brown on the flip side. I do it in stainless and never have an issue but I also cook omelletes in stainless, so there's that. As another anon said make sure you squeeze out the a lot of the water.

Hash browns are one of those dishes that you're going to have to establish a protocol for your kitchen and stick with it every time until you perfect it.

Prep: Peel an uncooked russet potato. Use a cheese grater to grate the potato into a bowl with cold water to keep the potato from changing color. Rinse the excess starch off the potato. Strain the potato, lay it out on paper towel, and DRY to potato as much as you can. The dryer the better.

Cook: Pre-heat your pan to about a 5 / 10. Wait until the pan is hot enough that a drop of water balls up in the pan and doesn't evaporate immediately. Add enough oil to the pan to cook the first side, maybe 1-2 tbs depending on your pan, and get it hot and wavy. Gently sprinkle your potato into the pan. You want the potato to be fluffy in the pan, not dense. Season with salt and pepper, and cover for 7 minutes, then check to see if it's brown, if not, give her more time. When browned, cover with a plate/cutting board/whatever and flip it upside down in the pan, add oil if needed before putting the uncooked side back in, cover, and cook again until done.

The key is DRY potato, plenty of oil, and a HOT pan. Keep track of your oil and heat, adjust as needed, and you'll get it right every time when you perfect your technique.
