I've really fallen in love with Norwegian mackerel. Went to a Korean place that had a grilled mackerel dish and I fell in love with it's oily, almost buttery meat. Since then, I've taught myself how to make grilled mackeral at home and it's one of my all time favorites. I've even managed to convert a few friends who didn't like fish.

4-7 medium to large russets
3 cubes of knorr bullion or equivalent
1/2 stick of butter (4 tbsp)
4 large leaks
1 tbsp thyme

cut, clean, and chop leaks
fry in butter until translucent
peel and slice potatoes
add water until potatoes are just covered
put in thyme and bullion

How do you make it at home? There's a restaurant close by where one can order grilled whole fish and they'll give it to you in a pizza box and it's a pleasure to eat. I don't think I've had grilled mackerel but it certainly looks appetizing.

If you don't have a grill you can broil them too.

If you have a toaster oven that can broil, I'd recommend using that. It's easier and doesn't require using a huge full sized oven to get the job done.

I usually go to my fish monger and ask for two of the fattest and freshest mackerel. They'll usually gut it and chop off the head for free.

I suggest using tin foil on whatever pan you plan to cook them on so that clean up and fish-smell is at a minimum. Lightly season the fish with salt and pepper and whatever else you want on top, then lay them flesh-side down so that the skin is cooked first and gets a little crispy for about 10 minutes. Once done, flip them over and reseason if you feel like you need to then broil for about 15-20 minutes more to give it that nice golden brown color on the surface. Serve with rice and voila!

Easy peasy, juicy and delicious. Hope you give it a shot!

Chicken Masala. It's a fairly dry curry if you use fresh tomatoes rather than chopped, but it's still really good
>500g Chicken Thighs
>2 large red onions
>Handful or so of finger chillies (you can chop them or leave them in whole, whatever really)
>Tin of chopped tomatoes or a couple of tomatoes chopped
>1 tsp garlic paste
>1 tsp ginger paste
>1 tsp Garam Masala
>1 tsp corriander powder
>1 tsp chilli powder
>1/2 tsp tumeric
Fry the onions until they start to brown and then mix in the garlic/ginger paste and fry that off.
Next fry off the powders and chillis
Add the chicken and mix it well with the spices
Add the tomatoes and leave it to cook for 20 mins, preferably in a pot with a lid.

Don't be afraid to overdo it on the butter or thyme. If you don't use the korr bullion which is packed with sodium and msg kinda crap make sure you check your seasoning often. Add a splash of milk at the end for color. Next time you can add cream and blend it cold to make a vichyssoise.
