Potatoes are engraved in my country's culture and I've been eating them ever since I was a little boy, my parents, grandparents, schools, it tastes fucking incredible with meat.

This guy knows. If you've already got a mostly assembled dish, mix equal amounts of cornstarch and water (about 1tsp of each per cup of liquid in your dish) into a slurry, then quickly whisk it into your dish and continue to reduce, should thicken in 3 minutes.
