Oil is used to get the flat top ready to fry something, transfer heat and make sure nothing is sticky. The butter is the flavor component. You'd be able to get some browning from the oil but not as thorough of coverage and it wouldn't be as tasty (but still good). Also the butter would burn alone so the oil helps compensate for the heat.

It probably hasn't burned on the outside because he let the grill get hot without being on too high of heat. That way it'll start browning right when it hits, but it's not maximum heat that tries to reduce the food down to smoldering charcoal. Med-High or something.

not even close, think about it: if the temp of your pan is high enough to burn butter then why would the oil in the pan not be the same temp, and thus burn the butter? this is just regurgitating the same tired advice as 'searing the meat to seal in juices'. butter can burn in oil just as much as it can burn by itself in the pan.

yes, cooking it over lower heat will take longer but it produces better results, also the cheese slices arent straight from the fridge or anything, they're room temp

I toast one side of both pieces of bread, place the cheese(s) on the toasted side, melt a small about of butter in the skillet, put the sandwich together, toast one side of the sandwich, melt a little more butter, toast the other side.
People that don't take the time to toast the inside of of the sandwich are worthless and lazy.
