Yes, just add a thermostat to it. There are plenty of kits for this, and DIY info online. You can also use a rice cooker, or a pot on a hotplate.

you can even do it with a pot on the stove and a thermometer. No need to buy an overpriced meme appliance for it.

It's a luxury. It cooks things as perfectly as possible, you sear it, you get restaurant-quality food. You can leave the food in there for a while as well if you aren't hungry once it's done, you can throw food in there before work, then come home to a fully-cooked entree.

I have one and I use it frequently enough to merit its purchase. Steaks are good, but it actually makes really great and easy fish, eggs, custard, etc. You can't fuck it up, you can turn it on and forget about it, low-effort, consistent results. It's about as fun as owning a food processor, double boiler, or any other kitchen tool or appliance. Get one if you like to experiment in the kitchen.

This is why I like mine. I don't like spending a bunch of time prepping food when I get home from work so the relative simplicity and hands off nature of sous vide is appealing to me.
I don't know nor do I care how it stacks up to traditional methods, but it seems to produce great results and allows me to eat cheaply and easily instead of ordering out all the time.

If I buy a really thick steak I will usually use mine to cook it because it always comes out perfect. If I spend like 20 or 30 bucks on one goddamn steak I don't want to screw it up. I also used it before for cooking a beef brisket and it came out perfect.
