process it into lard

-put all of the grease into a large pot
-heat until completely liquefied
-strain through a fine sieve to remove all solids
-return to heat
-heat below smoking point but just high enough to drive off all of the water
-once the crackling noise from water in fat stops, you know that all the water is gone
-preserve in jars
-let it cool and solidify

the lard should be completely white when you are done. if not, the lard will not preserve for very long. use gentle amounts of it when you cook unless you're making mexican food.

One thing I've done with bacon grease is cooked out chopped mushrooms and diced onions in them, and then take some sliced cheese and bread to make a melt. You could probably use other vegetables like peppers too in that recipe.

Another thing you could do is cook your French toast in it once it's all soaked in batter and all that. Both of these options are tremendously unhealthy, but they're the only applications I can think of
