This particular gimmick doesn't suck too bad. Lock out moister using fat seems like a pretty decent way to go about aging a steak.

As for stupid gimmicks like that smoked watermelon which literally no one gave a good review for, or restaurants where the menu is just 12 different types of mac n cheese are rather lame and grow stale rather quickly.

I let Admin Smith sort it out, if they survive then their gimmick is ok. If they die then it was too gimmicky.
Technically, any restaurant with any kind of 'cuisine' or theme is a gimmick, it's just a question of how narrow and how novel it is.

A Thai restaurant is a gimmick, it's a restaurant that only sells Thai food. People love those.
A menu where every dish is using apples is a gimmick, might get old but people probably will go there for pie or something.
A restaurant with ninja-costumed waiters is a gimmick too, maybe too specific (but great for children's parties?).

They'll survive if their gimmick appeals to enough people, even if it's because they're next to a tourist site or a nightclub with a steady supply of drunks.

As far as /ck/ is concerned, the only question should be if the food is delicious and healthy.
