After dumbass northern whites fought and died to free the blacks, a lot of blacks took the opportunity to fuck off from the south to northern and western cities. Eventually, there were enough blacks in those cities to support businesses to cater to them, so blacks started opening restaurants serving the southern foods that were not common outside of the south, or in rural areas. They called it "soul food" because "southern food" might attract whites instead of blacks, and being the bigoted pieces of trash a lot of them are, they wouldn't want that.
