They're never crunchy or tasty. What am I doing wrong? How do you bros make them? I don't use oil by the way, I just soak the potatotoes in water after slicing them up, then place them on a pan and bake them for an hour or so.

Why don't they ever come out crunchy?

Unless you dry them enough (almost dehydrated) they won't be crunchy just by heating them in the oven.
If you are not using oil, that's the best way I can think of achieving what you want. The oven will be the final dry and season.

You put potatoes in water to prevent them from turning brown. If you're going to cook them immediately just cut them, right before you're going to cook them. If you want them crispy toss them in a little oil first - with whatever seasonings you want - and then throw them directly onto a sheet tray in a single layer and into the preheated oven. They'll never be as good as deep fried, but without a little fat they wont crisp up. Deep frying is more of a hassle at home, but is honestly healthier if you care about consuming too much oil.

Usually they tell you to soak them in salt and freeze them so some of the starch comes out but that's shit anyway. If you really don't want to use oil you have to dry them. Like the dehydrated fruit and veggies they sell (like beetroot or sweet potato chips)

pat them dry with a paper towel, them being soaked keeps them to hydrated to have a crispy crust
I've heard lightly tossing in whipped egg whites helps give them the crispiness or crunch of traditional fries without oil but i cant confirm this. seems worth trying though

cut into wedges, boil til soft, let air dry/cool, then bake. wala, ultra crispy oven fries without a single drop of oil. the only way to fuck it up is to not let it bake long enough.

Not sure if this will translate to oven fries, but when I make stove top hash browns, I throw them in the microwave for about a minute which does a good job of getting the remaining moisture out

maybe give that a whirl
