Yeah, that's pretty bad. No discernible veg (unless, oh god, is that corn?!), it's swimming in grease, and there's no browning on the top. I refuse to believe she drained the beef at all, there's literally nothing else that would cause that unless after she drained it she poured a greater amount of oil back into it.

Let me help you out:

2lbs of ground beef, 85/15 or 90/10
1 large onion, grated
2 large carrots, grated
4 cloves garlic, minced
4 tbsp of tomato paste
Several glugs of worcestershire sauce
2 cups red wine
2 cups chicken stock
1 tbsp fresh or half tbsp dried thyme
1 tbsp fresh or half tbsp dried rosemary
salt and pepper to taste

Cook off your beef in a bit of olive oil until well browned and there are lots of crispy bits. Add your grated onion and carrot and cook until tender, then add your garlic and fry for 30-45 seconds. Clear a hole in the bottom of your pot and add your tomato paste, stirring thoroughly to remove some of the bitterness before swirling it around into your other ingredients. Add your worcestershire sauce to taste, I like a pretty strong smokey flavor. Add your red wine and herbs and simmer for several minutes until well reduced. Add your chicken stock and reduce that as well until it forms a really fine, cohesive meat paste.

While the simmering is happening, peel and dice several medium yellow or russet potatoes and boil until tender. Salt, pepper, and a bit of milk, stock, or water to taste, along with some butter, and mash fine. Stir in a good amount of freshly grated parmesan.

Add your meat paste to the bottom of a casserole dish and then spread evenly. Spoon on your mash and spread that evenly as well. Give it another pinch of salt and pepper, some more grated parmesan, and toss into a 375 degree oven for 30-40 minutes or until nicely browned. Remove from the oven and let cool several minutes before serving.

Not at all greasy, the veg literally melts into the meat sauce, and the depth of flavor is incredible.

I had to ask what she did because there was a pool of grease in my oven from this overflowing.

Let me educate you. Shepherds pie can only be made with mutton. A shepherd could never of afforded a lamb to make mince from. They would of been sold to the Lord of the Manor, or the Clergy.

Parson's Pie is made of lamb or venison. Cottage Pie is made with beef or trout. Faggot Pie is made with pork, and almost entirely unique to Norfolk. Ghillie Pie is made with salmon or grouse and is mostly seen in Northumberland and Scotland. Finally, very rarely seen now, but Regent's Pie is made with swan or historically with exotic game like gazelle, zebra or turtle.
