Have any of you guys actually been to an authentic Italian restaurant? The meals are usually divided into four sections- Appertivo, Primo, Secundo, and Dolce.
Appertivo is usually something light like anchovies and bread, dried meats, preserved vegetables, etc.
Primo is almost always pasta. Cacio e Pepe, Carbonara, Amatriciana, etc.
Secundo is usually a simple meat cooked in butter and a few Italian spices. Veal, mussels, steak, pigeon, rabbit, or whatever
Dolce consists of the stereotypical Italian desserts.
The only dishes that almost always contain the pasta, tomato, and cheese commoy associated with Italian food fall under the Primo category. The other three courses lack these things more often than they contain them. I’d say only about 50% of the dishes on a menu you’ll find at a good Trattoria in Rome or Orvietto or wherever contain pasta, tomato, or cheese.

Every christmas my family and I make cappelletti (2nd generation italian-american). My Ma prepares the broth for the pasta ahead of time and we usually eat the solids for dinner that night.
