thoughts on MSG?

do you use this in your cooking?

why do so many people treat this like poison?

Because momscientists gave it a bad name. I never really use it unless it's for Chinese American food but it's got a bad reputation from idiots.

Great meat tenderizer as part of a dry rub. Just use it, and don't tell anyone, and let them compliment your cooking. Glutamate isn't "just an amino acid", though. You must use it sparingly, because too much tastes awful and will make your stomach feel raw.

literally nothing wrong with it. It was memed to be bad by some faggot who bitched that he gets headaches after eating chinese food.

I use the smallest pinch occasionally in my dishes and it makes a good difference to the taste without overpowering.
If you're going to use it use it with great moderation.
I get headaches and a hungover feeling with a numbish tongue after eating chinese takeout because of how much they put.

just like diet soda, in the 80s some canadian lab rats got sick after ingesting 40x the amount a human would, so they called it dangerous.

Used to make crisps taste lovely in the uk. Then they removed it. That or my tastes changed

I got a big bag of it recently.
Also looking for good uses for it. So far I've only chucked a teaspoon of it in a vegetable stirfry.
I want to add it to the breadcrumbs for fried chicken maybe but not sure what else.

>thoughts on MSG?
It's not dangerous or toxic or anything like that, but it is usually a shortcut that doesn't taste as good as various alternatives.

>do you use this in your cooking?
Yes, but not often. I prefer to use natural sources of glutamates like parm reg, doubanjiang, soy sauce, worcestershire, fish sauce, ferments, etc.

>why do so many people treat this like poison?
It's an old wives tale that MSG causes headaches, and as I mentioned above it's the sign of a corner-cutting cook.

You don’t get any of that stuff. Reactions to MSG have been proven to be false/placebo countless times.
