Hey /ck/, today I'm going to share my authentic texan chili recipe with y'all, grab the biggest stock pot you can find because everything is bigger in texas!

First, prep your veggies, I've sliced and diced a kilo of onions, one whole celery and half a kilo of red and half a kilo of green bell peppers.

Set that to the side and start cooking off your protein. I'm using a 11 litre stock pot for this. First I start with two chorizo sausages sliced and diced and fry them in oil, I like the subtle flavour it gives the oil, I would use some bacon here but I don't eat pork.

made this shit but modified it to improve it because no one who writes recipes for the internet knows how to cook

>minced onion (thought it would be better than sliced, but probably yields similar results)
>marinated chicken in italian herbs/spices + lemon + salt/pepper
>used dutch oven
>cooked bacon, cooked chicken in bacon drippings, caramelized onion in bacon/chicken drippings
>skipped stupid blender step, cooked garlic until fragrant in onions
>turned off heat - added homemade pie pumpkin puree, chicken stock, HEAVY CREAM (cuz milk is for pussies)
>mixed in pasta, mixed in half mozz/parmesan blend
>topped mixture off w/rest of cheese

The reason kidney beans are used for chili is raw soaked ones can be added at the very beginning and not get soggy. They're not too eager to take on water and actually lose some amd become too dry if pressure steamed without their own pool. Canned is doing it wrong, but you risk destroying some organs if you fail to cook them so it's probably for the best.
