What does /ck/ do with their chicken breasts? They were BOGO while I was shopping so I have decent amount of them.
I’m thinking about a gnarly Cajun marinade with some Alfredo pasta, and then some thinly sliced well seasoned battered/ fried buffalo strips.
I have a meat mallet, so I’m also thinking about chicken cordon bleu.
>inb4 “just watch the BA video about chicken tiddies”
I did but it was only preparation methods/ techniques, I’m mostly looking for whole recipes with seasoning suggestions.

Chicken parm is on my list. I could do a chicken katsu (with fried rice), but I only have teriyaki sauce in my house. I need some curry or something.

I like making "Chinese" dishes with it too even though most places use thighs

EVOO, cajun and dried habanero and other seasonings, cover for a while, sear hot, and then cook slow. Always dice for maximum flavor and better consistency

slice into thirds, from top to bottom. now you have three thin filets. pat dry, season with salt or old bay, throw it on the cast iron (nice and hot).

when they're done cooking, let them rest just like a steak. then eat two and put one away for later. alone is delicious, but put one in bread or something if you have to be a princess about it.

Put 3-4 breasts into plastic bag. Add: soy sauce, cumin, oregano, garlic, bay leaves, paprika, salt and pepper, white vinegar, and a bit of olive oil. Close bag, shake, and leave in fridge overnight. Pre-heat oven then bake on a wire grill over drip pan at 450F for 50-55 minutes.

I make a seasoning with:
- garlic powder
- onion powder
- salt
- pepper
- basil
- oregano

Coat the chicken breast in olive oil, sprinkle the seasoning mix heavily on both sides, bake at 400 for about half an hour

>chicken breast
>dice into small cubes
>season well with salt and pepper
>cover and put in fridge until you are ready
>roughly chop half an onion
>crush or dice up however many cloves of garlic makes u happy
>cut up some basil, leave some alone
>(OPTIONAL: wash some baby spinache and dry it)
>pan hot
>well oiled
>1/3 of garlic in
>chicken in
>you're basically just wanting to get really good color on it. pieces should be small enough that if they're not fully cooked through after browned then they should cook later in the sauce
>set aside chicken
>pan hot
>rest of garlic in
>onions in
>sweat
>can(s) of crushed tomatos in (more than one breast add one more can)
>if you have some cherry tomatos or leftover fresh tomato feel free to dice them up and add them to if you want
>salt, pepper, dash of oregano, crushed red pepper in
>chicken in
>(OPTIONAL: Spinach in)
>cook down somewhat until the tomatos incorporate better
>add heavy cream until you get a good pinkish red hue. can add more if you like more creaminess, i like it barely pinkish
>chopped basil in
>pour on pasta
>leaf basil on top

BBQ Chicken
>salt pepper
>leave in fridge until ready
>pre heat grill, nice and hot. 375 degrees fahrenheit at least
>(OPTIONAL: pan of water for the grill - if i do this for the first half of cooking the chicken it usually results in a better cook. don't leave it the entire time tho)
>seasoning: paprika, brown sugar, garlic powder, onion powder, crushed red pepper, coriander
>coat chicken well with seasoning
>hit the grill with that chicken
>i turn the chicken every 5 minutes about.
>sauce: fav bbq sauce, teriyaki sauce, lemon juice, splash of bourbon or whisky, honey as needed for taste (my fav bbq sauce isn't actually all that sweet so i usually add a little)
>use water to thin it if its too thick to brush the chicken with
>heat it
>brush top of chicken with it, flip it, brush again, wait 5 minutes, flip it.
>take off the grill after about 161*F
>rest
>eat
