I'd go with Beggar's Chicken.
Roast chicken cooked in clay and leaves to seal in the juices. Ignoring soups and hotpot because succulence isn't a thing there, sealed roasting seems like the ideal method.
It's often done with foil now but I'm sure the leaves are better.
I kind of want to make it with something like palm leaves and bread dough, see how that turns out.
