I'm in Japan right now. Honestly, the food is absolutely amazing. If you haven't been to Japan, you can't judge the cuisine from whatever you have in your home country.

I have had so much good food in the past 10 days, only a small amount of things I didn't like. Those being, natto and metaiko off the top of my head.

10/10 cuisine.

I particularly loved Kyoto. Kyo-Kaiseki, Obanzai, tofu, pickles - fuck, everything I ate there was so good (though pretty much every meal I had was bare minimum $30.)

Miso soup is indeed a pillar of Japanese cuisine.

The concept of "一汁三菜," or having "1 soup and 3 different dishes" every meal is the most important tenet of Japanese cuisine.

In the Japanese brigade system, the sous chef, or 煮方 nikata is responsible for preparing all soups, right up from making stock in the morning. One reason why it's considered difficult to prepare the stock is because there is a certain level of precision required when using katsuobushi and konbu. They're both prone to over extraction, and adjustments need to be made for seasonal fluctuations in the water. This is why some Kyoto style kaiseki restaurants in Tokyo ship water from Kyoto everyday for cooking.

A real Japanese restaurant would change their miso soup at least once a month, if not every week. The ingredients, and type of miso used would have to match the season.

I could go on and on about miso soup, but if you're ever get to come toJapan, you'll be surprised to know that miso soup is usually served at the end of a meal, with rice and pickles.

The red miso soup, or akadashi, is commonly used to gauge a chef's skill.

I totally understand why youd think Japanese food is bland. I think a lot of it has to do with the fact that there is no sauteeing, stir frying, or the use of any garlic in traditional Japanese cuisine.

Also you really have to keep your nose clear... A lot of the "seasoning" is basic, just salt, sugar, miso, soy sauce, and the rest depends on the quality of the featured ingredient. This is why even cheaper restaurants are sensitive to the seasons. There's literally a dish in late spring thats basically a braised whole onion. The "sauce" is nothing more than stock, sugar, and light soy sauce, because you're supposed to enjoy the "freshness" of seasonal onions.

Food in Japan is cheap because food service workers are paid a garbage salary (flat pay) and made to work insane hours... Illegals and Mexicans in American kitchens ain't got shit on us.

I work 16+ hours for 6 days a week, but I get a salary that's based on a 12 hour day. It's technically illegal, but also an extremely common practice. I know workers in 24 hour soba stores get even less pay than me for even more hours worked...

The worst I heard was from an apprentice who burned out of a 2 star restaurant in Akasaka.... He lived in the company dorm that was 2 blocks away from the restaurant. Worked for 19+ hours a day, slept for. 3 and a half hours a day, 6 days a week. No exaggeration.

The majority of food shops in Japan are considered "black," or illegal, but this is why you can buy a nice big bowl of soba (no artificial additives at places like 吉そば) for less than 500 yen...
