Leftover rib roast, cubed. Sauteed 10 minutes over low heat to render the ample fat. Diced tomatoes, homemade plum tomato sauce, red pepper, green pepper, onion, white sweet corn, whole cayenne and ancho peppers, assorted spices. No fucking beans.

Shit's pretty damned good.

def needs to cook down a lot. also might want to add some coarsely chopped chilis to it, you want chunks of chilis to match the chunks of meat. I'd add chipotles to help balance the sweetness of the corn, and some jalapenos to balance the color of the corn. Oh and next time ditch the corn. Its chili, not beef soup. You start adding corn, next thing you know you're adding potatoes and noodles.

I cooked down another 90 mins. Ended up nice and thick. I use ground chipotle, but agree chopped would be better. I pull the whole chillies out so the kids don't get all weird. It's plenty hot, but doesn't leave evidence for the little bastards to find. The corn adds a little sweetness and helps the kids learn to like heat.
