What I could never get over with that show was that almost every restaurant that was failing was an Italian place.

Oh, sure. There were odd balls of a Greek place, or a Steakhouse, or a burger place.

I went to some shit Italian place tonight with my girlfriend and I went to go wash my hands and the bathroom was a dump, my first thought was to not eat the food because if they cant keep a bathroom clean what says they can keep a kitchen clean. you are not going to find a single Italian restaurant in this county actually staffed with Italians for the sole reason that they are impossible to work with

on their first day you will try to teach them but they will interrupt your every 5 seconds to let you know that they already know whatever it is you're trying to teach them and they do not play well with others

not to mention they think they're entitled to special treatment solely because they're Italian and they are apparently god's gift to the world

even Italian restaurant owners hate hiring Italians, Mexicans work for less and don't bitch even when their basic human rights are being trampled

I guess because Italian food can be pretty easy to do.
Basically just open a reaturaunt and sell pasta, meatballs, and pizza.
It's basically a couple ingredients per dish, just add basil and oregano and sell it to people as "authentic" or whatever. Oh you have garlic knots? Yeah, every God damn Italian resturaunt has that, you're not special. Wow, pasta with tomato sauce! I've never seen that before! Oh, you put some mozzarella and sauce on top of dough? You're so special, even though I can get a pizza that tastes exactly the same across the street. It's such a basic menu that any hackjob can put together, they all have the exact same dishes with little variation. If I go to an Italian resturaunt the fucking owners mother better crush those tomatoes daily for the sauce while the husband sits outside smoking a cigarette with his hands covered in flour after making pasta and pizzas all day. If I don't taste the pure essence of Italian arguments and hand gestures in that fucking food then it's not italian, it's an American resturaunt with Italian inspired food.

Ironically the first job I had at 15 yo was washing dishes at a "mexican" restaurant owned by a wop and with wop cooks. They were pretty cool, would drink continually and let me drink too even though I was only 15. Fri.and Sat. we were swamped and really had to bust our ass but the owner, drinking and counting the massive pile of cash at closing, always slipped us extra cash.
