The idea that tex mex is less Mexican than any other Mexican food is ludicrous. There are 6 distinct food regions in Mexico. Is snapper taco Mexican? In the Yucatan it is. But no one eats it in cabo, they prefer tuna. Or do you think goat is Mexican?

For about 400 miles from the Rio Grande, Mexico looks a lot like Texas.
