realtalk though, potato chips well-done are the fucking tits. If I'm going to subject my metabolism to fried-simple-carbohydrates like potato chips, fries, etc. I want them crispy and the more maillard-reaction-y flavor, the better. not soggy with oil or undercooked. and a lot of busy chains and sich have financial incentive to not cook things overlong, they often undercook as a rule of thumb
