What's the best way to make them crunchy and tasty with just (russet or sweet) potatoes and an oven? I have a family history of heart disease and therefore need to be on a low saturated fat/low cholesterol diet with large amounts of whole plant foods and fiber.

You can't. The closest you'll get is by slicing them thinly and roasting them until they're crisp.

You won't get crunchy sweet potato fries without coating them in starch and frying, the sugar and moisture in them just prevents them from crisping. For russet potatoes, your best best is probably slicing them thin and baking at around 350F until they crisp up. They might end up a bit hard and chewy without oil though, but it might work.

You can also buy sprayable oil or a bottle to do that to use the smallest amount of oil possible.
