i've been watching some chinese cooking videos and what seems to be a trend is to wash fish in a solution of a little salt, like an ounce of clear spirit, like baiju, and water.
i don't speak communist so i've been thinking and alcohol being a solvent, is it used to get rid of the fish odor that so many people don't like?

This is gonna be a long effort post but I'm just gonna assume OP is still here and interested.

Fish is very rich in proteins, which are basically long chains of amino acids. When living things die, bacteria degrade the proteins in the fish into their amino acids and further down to so-called "amines", which are highly volatile. Their smells range from "week old cum" to "feces", but overall the smell profile is pretty yucky. That's what constitutes the fish smell. High-proof alcohol is of course a disinfectant, and too much salt also kills the bacteria. This does not preserve your fish forever since they just accelerate the inevitable, but it makes handling fish more bearable.
Should you happen to have fish smell on your dishes after you eat it you can easily clean them with lemon juice. Amines are bases, and the juice is acidic. Putting both together yields " ammonium" salts which aren't really volatile. They can also be washed out very easily because they're water soluble. That's also the reason why a lot of fish in restaurants gets served with a lemon slice as decoration.
