Why do Americans bastardize original recipes, make them worse, and then call it "Chinese, Italian, Mexican, French, etc." food when it in no way resembles the genuine article anymore?

We've only made those foods better and what we've taken in is the most popular version of those foods. Our Chinese is better. Our Italian is better. Look at the worldwide spread of our pizza. Tex Mex is much better. The most acclaimed restaurants are where else...America. Who sets the food trends, America. Where do all the chefs train, America. We're the driver of culinary innovation anymore...not Italy, not France, who just get by on old reputation.

Americanized versions of food weren't created by Americans. They were created by immigrants from those countries. The food is simply changed due to a different way of life; for example, Italian food was introduced to America by people from Southern Italy, a poor region. They didn't get a lot of sugar down there, and when they came to America, they were eager to add it to all their food, since this luxury was now suddenly available in large quantities to them. It's the same story with American Chinese food.

As for exports, yeah, they embarrass me. We can do better. But don't forget that the customer is who drives demand. The root of the problem is whomever is buying those exports. If they demanded higher quality or they wouldn't buy then the suppliers here would be forced to up their game.

I only really felt at home in MN, which is not where I was born.
