The foolproof way is butter both sides then stick in convection oven at 345 F, just below the smoke point of butter, for 10 minutes. Perfectly browned and crispy but never burnt. Cheese always melted perfectly.

That's pretty pessimistic and a bit unrealistic. Millions of people eat bread and cheese fairly often, so giving tips and tricks on how to do it better is going to be kind of popular. You can just throw any cheese in between any bread and cook it in a hot pan and call it grilled cheese, but there's nothing wrong with some people being a bit more interested in it for a while and learning other ways to do it too.
